Pi, founded in 2018 by John Savage and Reggie White, a former auctioneer educated at Ballymaloe Cookery School, is widely recognised as serving the greatest wood-fired pizzas in the Irish capital. The toppings, made with '00' flour from Naples and fermented for 72 hours, include cheese and charcuterie from artisanal Irish producers like Fingal Ferguson's Gubbeen Smokehouse. Baked in Brick, Birmingham
What began as a hand-built wood-fired pizza oven and hut at the base of owner Lee Desanges' yard evolved into a mobile pizzeria in a converted Mini that competes in the European Street Food Awards. In 2018, the company expanded to a permanent restaurant in Birmingham, with dough produced to a unique recipe using two mixes of '00' flour and cooked in an English-built wood-fired oven.
"Our toppings are all about flavour and sometimes not so traditional," says Lee, referring to the Blanco pizza with béchamel sauce, oak-smoked chicken, sautéed rosemary potatoes, and rosemary oil, as well as the wood-fired squash, roasted courgette, and crispy kale.
Paesano Pizza, Glasgow
Paesano Pizza, a Glasgow institution, claims to have been the first to introduce true, traditional Napoletana pizza to the city, and the original location on Miller Street has been joined by a location on Great Western Road.

Friends Victoria Featherby and Alex Walker founded Scream for Pizza after meeting in 2010 while working in a cruise ship company's entertainment department.
